Popular for centuries, they are a traditional in the entire Veneto region, but in particular to Venice.
Ingredients: 1 envelope (1 teaspoon) vanilla flavoring, 3 egg yolks, 50 g sugar, 150 g all purpose flour, 150 g cornmeal, 70 g butter, 50 g raisins, pinch of salt.
To prepare: Preheat the oven to 180°C. Rinse and dry the raisins. Beat the egg yolks with the sugar. In another bowl, mix well the two types of flour, salt and vanilla, then add the melted butter while still hot, the egg mixture and, finally, the raisins. Shape the dough into disks and space them out on a greased cookie sheet. Bake for approx. 15’ until golden brown and dry.
