SAVORY SUMMER MOUSSE

Serve this recipe as part of an hors d'oeuvres buffet to accompany an aperitif.

Serves 6: 3 small cucumbers, 3 slices boiled ham, 50 g cream cheese, Moletto Integrale extra-virgin olive oil, salt and pepper.
To prepare: Peel the cucumbers, slice them lengthwise and then dice. Dress with extra-virgin olive oil and salt. In a separate bowl, purée the ham. Mash the cheese with a drizzling of oil and freshly-ground pepper.
In the bottom of each glass, first spoon in some of the ham purée, then the diced cucumbers and, finally, the cheese mixture. Drizzle over some Moletto Integrale extra-virgin olive oil.
