Ingredients: 500 ml milk, 100 g butter, 250 g all-purpose flour, pinch of salt, 2 tbsp sugar, 6 eggs, 4 tsp baking powder, 200 g raisins, 1 baking apple diced finely, peanut oil for frying.
To prepare:
Melt the butter, sugar and salt in the milk. When the mixture begins to boil, add the flour all at once. Mix the batter with a wooden spoon and cook for 3-4 minutes.
Let cool and when the mixture is lukewarm, add the 6 eggs one at a time. When the mixture is well-mixed, add the raisins, baking powder and diced apple. Let stand for 15 minutes and then prepare to fry. In a pan, bring the oil to a boil and, using two teaspoons, take a small amount of the dough and shape it into little balls, dropping them into the oil as they are ready.
As soon as the fritters have become a nice golden color, lift them out with a strainer and let drain on paper towels; sprinkle with white sugar and serve still warm.
