Serves 6: 2 firm Kaiser pears, 1 hg aged Piave-, Carnia- or Verona-region cheese, two heads of Treviso radicchio, Moletto balsamic vinegar, Moletto balsamic vinegar Old Botte 12, Moletto Extra-virgin olive oil Integrale, salt.
To prepare: Cut the pears, cheese and radicchio into strips. Dress the radicchio with salt, extra virgin olive oil and balsamic vinegar. Add the pears and arrange the mixture on plates. Add the strips of cheese and garnish with a few drops of Moletto 12-year aged balsamic vinegar.
