THE SECRETS OF VINEYARDS ARE IN THE MOLETTO'S WELL

Following Charles Darwin's principles, Moletto has managed to win recent drought.

The old peasant well
Well-being of the Moletto's vineyard is read through a special "eye": water in the well, which is situated in one of the farm’s courts.
If despite ruling drought and relentless sun there is water in the well and its level is constant, it means that vines are in safety, and heat is not dangerous.
The same has occurred in recent weeks. While a lot of farms all over Italy were working hard day and night to irrigate the vineyards, at the Moletto's farm plants stood the warmth without receiving any water in addition. Giovanni Stival explains the reason: "Irrigation is not possible on our farm. There are no rivers o canals nearby our property, and we didn't think about any rescue system. A condition that at first sight seems unreal, but which has allowed plants to adapt in a perfect way.
Darwin and the vine
Even the scientist Charles Darwin by name once said: evolution passed through adaptation. Moletto’s vineyards had to stand lack of water, tanks to this fact roots had developed in such way to reach humidity in subsoil. “Thanks to the nature of our soil, humidity has always been at high level – underlines Giovanni Stival – plants didn't suffer water stress and clusters have matured in a homogeneous way."
Only essential chemistry
Climate during the year, sometimes even bizarre, had wonderful effects. Rain in spring has influenced a lot perfect development of greenery, formation of clusters and its growth. At summer thresholds vineyards were in excellent conditions and didn't suffer dry periods at all. On the contrary, the absence of humidity was proportional to the absence of diseases. That's why chemical treatment of the plants was reduced and limited. Guided by ancient peasant wisdom, Giovanni had been going frequently during the week to control the level of the well: the level was constant; it meant that plants were not suffering.
And now, it's time of grape picking...
The Anticyclone that had been still for couple of months above Europe and had lead grapes to an excellent maturation. The level of sugar was so high to demand anticipated grape picking - especially of white berry variety - in order to prevent increasing of the level of sugar to the detriment of acidity. Sure enough on the farm grape picking was decided day by day, taking into consideration everyday tests, which were held "in the field". It was another time approved that working process close to nature can't be standard and repetitive, that's why every time it should be renewed and depend on changing circumstances.
What is fermenting in wine vats?
First evaluations made by Giovanni Stival were of great satisfaction: White wines are excellent: soft, full-bodied, savory. White grapes varieties with very high level of sugar and extraordinary smell. Red wines are not worse. We have picked a great Franconia grapes and splendid Refosco. Merlot is perfect: grapes are healthy, full and heavy to seem grape jam."
Grape harvest is finishing, and we are working at a fast pace in a cellar. There are all conditions to have wines to remember. Giovanni is already selecting some musts to start ageing.
