A long, unusual Charmat process because of the grape used (Pinot Bianco) and the length of time it remains in the autoclave. Incredibly fruity and full-bodied.
It is an extremely elegant spumante that is perfect both at the start and end of a meal.

Vinification
The alcoholic fermentation takes place in stainless steel vats, using selected yeasts. The wine was racked Allier oak barriques for 2 months. It was then put into pressurized tanks for 20 months for the sparkling process, using the long - really unusual very long - 'Charmat method'.
Tasting notes
Colour: brilliant, pale lively gold. Very fine, persistent perlage.
Bouquet: its fruitiness (banana, apple) and hint of chewing-gum are perceived immediately, followed by the slight sensation of bread crust.
Taste: in the mouth, delicate small bubbles with non-intrusive froth. A very young-seeming wine, despite its very long spumante process. A full-bodied wine with the proper acidic level and lightly tannic.
