Ingredients: Rabbit weighing approx. 1-1/2 kg, 2 celery stalks, 1 carrot, 1 small onion, head of garlic, 3 dozen sage leaves, salt, peppercorns, Moletto Extra-virgin olive oil Integrale.
To prepare: Put to boil a medium-sized pot with water and the vegetables. When boiling, add the rabbit cut into large pieces. Add salt and let cook for 1-1/2 hours. Turn off the burner and let the meat cool in its broth. Remove it from the pot and bone, breaking the meat into not excessively-small pieces. Place a layer of meat in a glass container, two half-cloves of garlic, 5 sage leaves and a dozen pepper corns. Continue layering in this manner until all the ingredients have been utilized, and then cover with extra-virgin olive oil. Let stand in a cool place for at least 12 hours.
